OUR PHILOSOPHY

Wagyu Kaiseki

Wagyu Kaiseki featuring charcoal-grilled Omi beef steak and a selection of accompanying dishes

Chapter One

Wagyu Kaiseki with
dashi, soy sauce and miso

Omi Daikichi beef, prepared with traditional Japanese seasonings and cooking techniques.

For around five years, this approach has guided our Wagyu Kaiseki at Gion Daikichi, bringing out the distinctive flavour of each cut.

Chapter Two

A new expression
of Wagyu Kaiseki

Building on the foundations of Chapter One, we now explore charcoal-grilled steak, sukiyaki and dashi shabu-shabu.

Experience how different cooking techniques and the careful application of heat reveal new textures and flavours in Omi Daikichi beef.

Grilled, simmered, or gently cooked in dashi.

Grilling over charcoal brings out the flavour of Omi Daikichi beef.

Simmered | Sukiyaki

The beef is gently simmered in our own sukiyaki sauce, blended with beef consommé.

Gently Cooked in Dashi | Dashi Shabu-Shabu

Thin slices of beef are briefly dipped in dashi to cook them gently. Broths flavoured with ponzu, sesame or plum bring variety to each bite.

Different cuts, pairings
and finishing dishes.

Explore a range of cuts of Omi Daikichi beef, raised on our own farm.

In our Sukiyaki Kaiseki and Dashi Shabu-Shabu Kaiseki, the cuts and their pairings change as the meal unfolds. Each seasoning is chosen to complement the cut, revealing a variety of textures and flavours.

The meal finishes with dishes such as rice simmered in broth, beef udon, risotto or a beef rice bowl, making the most of the flavours developed in the hot pot.

Photographs show examples of our kaiseki meals.
